Greek Lettuce Cups with Tahini Vinaigrette

I love getting suggestions for recipes to make. Whether is re-vamping an unhealthy dish to make it healthy, or making easier versions of healthy recipes you already love... I do it all!

Below is the full recipe for my first video post Greek Lettuce Cups with Tahini Vinaigrette.

Ingredients:
1 cup Cherry Tomatoes, quartered
4 oz crumbled Feta cheese
1/2 red onion, finely diced
3/4 lb boneless, skinless chicken breast
1/2 tsp pepper
1 tsp cumin
1 tsp garlic powder
1 tbsp Tahini
1/4 cup lemon juice
1 tsp honey
1/2 cup plus 1 tbsp olive oil
1 bunch Butter Lettuce

Directions:

1. Heat a medium pan with olive oil over medium-high heat. Season chicken breast on both sides with salt, pepper, cumin and garlic powder. Dice chicken into 1 inch pieces. Add to skillet and cook until golden brown and cooked through, about 5 minutes. Set aside
2. In a small bowl whisk together Tahini, lemon juice, honey and olive oil.
3. In a large bowl combine chicken, tomatoes, feta and red onion. Toss to combine. Drizzle enough of the Tahini Vinaigrette to coat all ingredients (you may be left with some extra)
4. Separate lettuce into individual leaves and fill with about 2 tbsp chicken filling.
Makes 8-10 Lettuce Cups
